Selection of raw material
For the elaboration of this vinegar, typical Oloroso wines from the Montilla-Moriles region of Cordoba are used.
Oloroso wine is a high-quality fortified wine made from Palomino grapes, which have undergone an aging process of at least two years in oak barrels.
Unlike other vinegars where low-quality or spoiled wines are used, DE LA CUEVA vinegar uses top-quality wines as its raw material.
Our philosophy is that a good vinegar must be produced from a good raw material.
Adification by traditional methods
The wines undergo a traditional acidification process, much slower than industrial acidification methods, which allows the vinegar to develop exceptional organoleptic properties.
